Introducing Fieldborn

Fieldborn Arrives.

Our beloved Estate Single-Barrel Cabernet Sauvignon has officially sold out. We know many of you loved it, and so did we. But this weekend, a very exciting new wine takes its place on the tasting menu: the first ever release of 2021 Fieldborn.

With just 50 cases produced, Fieldborn is more than a new new release. It feels like a glimpse into the future of Burnt Hill. A blend of 83% Regent and 17% Cabernet Sauvignon, it captures the depth, purity, and unmistakable sense of place emerging from our organically farmed South Block.

There is something deeply exciting about Burnt Hill organic Regent. Born in Germany and bred for resilience, Regent is a variety built for the future, capable of producing wines of real depth, grace, and character. On our hillside, it feels especially alive. Grown in living soils, it translates this place into something dark, mineral, vibrant, and unmistakably its own. Fieldborn is one of the clearest expressions of that promise we have released so far.

The Regent, clone 01.1 grafted to 101-14 rootstock, was hand harvested on September 1, 2021, carefully sorted, destemmed, and fermented with native yeast in a foeder crafted from ash trees grown here on the farm. It was then aged in neutral French oak barrels. The Cabernet Sauvignon, clone 6 grafted to Riparia Gloire rootstock, was harvested later on October 9, fermented as whole berries in stainless steel, then aged for three years in neutral Tonnellerie Taransaud barrels with bâtonnage. The two wines matured separately and were blended only after extended élevage, allowing each to fully develop before coming together.

The result is a wine with both wild energy and composure. Fieldborn opens with black cherry, wild raspberry, blackberry, and plum skin, layered with violet, earthy undertones, subtle spice, and a graphite driven mineral core. Fine tannins give the wine shape, while its natural tension brings lift, vitality, and movement across the palate.

Its name feels right. Fieldborn is born of the field, shaped by the realities of farming, and expressive of the place where it was grown. It reflects what excites us most about Burnt Hill right now: a young estate deepening in character, rooted in organic farming, and beginning to reveal the wines this land is capable of producing.

Only 600 bottles exist. For now, Fieldborn is available exclusively at the farm. We are thrilled to begin pouring it this weekend.
